PADRON Chilli (Capsicum Annum)

From the municipality of Padron in the province of A Coru, Galicia, northwestern Spain.
Requires picking at an immature stage, and frequent harvesting is essential
Mature in 70-75 days. Approx 50 seeds.
Pendant habit. Plant in soil temperatures at 27-32°C when possible. Capsicum seeds germinate very slowly in cooler soil. Place plants 30-45cm apart in rows 60-90cm apart with 45cm between plants
Harvest Padron peppers when they are 2.5-3.5cm long. As the fruit matures, grows longer, plumper and colours to red, the heat increases.
The full bodied flavour of the padron lends itself to many dishes, including omelettes, fried potatoes and salsa. Meaty and very tasty. Traditionally in Galicia they are panfried in olive oil, salted with sea salt and served with beer.
