From the foothills of the Dolomites, tucked up against Slovenia in the northeast corner of Italy comes one of the most beautiful and celebrated of the chicories of the Friuli-Venizia Giulia. Late-summer sown, plants grow in the field through frost until the outer leaves begin to die back and are cut off and the roots are dug and brought in to force in darkness, or covered with a bucket to exclude light. The result is a delicate rose-shaped head of tender lightly bitter leaves.
