White Salsify 'Blue Flower'. Long, white tapering root. Ideal for use in stews.  White Salsify grows similar to Parsnip and produces long (up to 12") tapered edible roots which are tasty and with a good consistency.  It is recommended to protect them from frost. (The Black Salsify is the variety often referenced as "oyster plant"). Both the Ancient Greeks and the Romans gathered wild salsify. This pale root vegetable is one of two vegetables called salsify. Another similar but distantly related vegetable — scorzonera — is sometimes referred to as black salsify. We have both of these available !
