This variety has large pointed leaves which mature early, usually in under 2 months. Monstrueux de Viroflay spinach (literally “monstrous of Viroflay”) is a very old, vigorous variety – already present in the 16th century – very hardy and resistant to the Paris winter cold. It is highly prized because it produces numerous, very meaty, large, smooth leaves and traditionally supplied the Halles market. It is an early fast growing variety, yielding from autumn through to spring and can be eaten both raw and cooked.
